Requirements Alto Kitchen and Bar is Panorama Mountain Resorts' newly renovated flagship restaurant. Located at the base of the mountain, in the heart of the village, Alto's sophisticated aesthetics blend perfectly with the rustic surroundings. Boasting a Forno pizza oven delivering signature pizzas combined with a decadent Italian menu Alto is a must visit at the resort. Panorama is looking for the right person to elevate the guest experience in Alto. The Alto Kitchen and Bar Sous Chef is responsible for excellence in product presentation, meeting all budget costs in assigned location, and for productivity of food service employees. Ongoing employee training, recipe development in conjunction with the Resort Executive Chef and a constant high standard of cleanliness is essential. The Sous Chef works on the production and preparation line of the kitchen, is present during peak business times, and must be familiar with responsibilities of the Resort Sous Chef to take command during their absence.

Essential Functions:
• Ability to understand and control labour and food costs
• Daily measurement of labour schedules and requirements, according to budgeted labour costs
• Daily assessment of food ordering and preparation requirements (par sheet levels)
• Ongoing staff training through example and leadership
• Continually monitor quality of food to guarantee guest satisfaction, in relation to guest comment cards, as well as to ensure quality meets outlet specs
• Inspect kitchen facility on a daily basis for hygiene, safety, and sanitation, implementing corrective procedures using the opening and closing checklist
• Communicate with the Resort Chef and offer recommendations for increasing revenue or decreasing COG’s or labour
• Responsible for the tracking of transfers through multiple outlets
• Ensure that the business interests of the Mountain Village are met on a consistent basis in the assigned location

Duties • Red Seal Qualification an asset
• Food Safe level 1
• Must be available for full-time
• 2-4 years supervisory experience in a high volume kitchen ideal
• Resort and/or catering experience preferred
• Excellent leadership, decision making and people skills
• Ability to organize and prioritize multiple tasks simultaneously
• Position requires strenuous physical work including heavy lifting, pushing or pulling
• Should be able handle excessive heat and excessive hours of standing and stress
